What changed after the initial evaluation
After the first cold pressing and natural fermentation tests, we drew several conclusions that completely changed our working method. It wasn't about a major revision of the recipes, but rather fine adjustments to the harvest calendar and the selection of apple varieties for each batch.
The first observation was that apples from the orchards at the foot of the Făgăraș Mountains, although smaller, have a higher content of natural tannins, which gives the cider a fuller structure. We decided to keep these batches separate, without mixing them with apples from lower areas, to obtain distinct flavor profiles. The second change was reducing the maceration time for the ginger juices – we noticed that after 24 hours the aroma becomes too pungent, so we shortened the process to 12 hours, preserving the freshness of the root.
Another aspect that came to light was related to packaging. The dark green bottles, although excellent for protecting the contents from light, had a longer cooling time in the refrigerator. We adjusted the bottle wall thickness to a compromise between protection and thermal efficiency, without compromising the ecological aspect. All these small adjustments were documented and applied starting with the next batch, and the result was immediately visible in the clarity of the taste and the stability of the effervescence.
For those who follow us, this evaluation also meant a change in how we communicate on labels. We abandoned long descriptions and switched to short phrases that say exactly what the bottle contains: the apple variety, the harvest date, and the dominant aroma note. No promises, no vague terms – just the information an attentive customer is looking for.

- „Autumn Orchard” Mocktail – 150 ml Artisanal Cider with Blackberries and Sage, 50 ml tonic water, a few fresh sage leaves, and ice. Mix gently and serve with a slice of green apple.
- „Summer Dawn” Mocktail – 100 ml Cold Pressed Juice – Apple and Ginger, 100 ml sparkling mineral water, juice from half a lime, and a few mint leaves. Shake with ice and strain into a tall glass.
- „Secret Garden” Mocktail – 120 ml Dry Cider with Red Currants and Rosemary, 30 ml elderflower syrup (no added sugar), 30 ml still water, and a rosemary sprig for decoration. Serve in a glass with crushed ice.
These combinations preserve the natural character of our drinks and add a layer of freshness that makes them suitable for any time of day. Each mocktail can be adapted according to the season – for example, replace mint with thyme in winter or add a few fresh raspberries in summer.
